Pico De Gallo

Summer is upon us and for my family that means fresh produce! Herbs and veggies galore can be found in my family’s garden. Our hands-down favorite and most sought after item in the garden? Tomatoes! Nothing beats a fresh homegrown tomato. Regardless if you are growing them in your backyard or picking them up at the store, there is a notable improvement in quality for tomatoes in the summertime.

My family’s favorite way of using tomatoes is by making a fresh batch of pico de gallo, aka salsa! I asked my mom for her recipe, the reply? Throw a little bit of this, throw a little bit of that – basically, this recipe is hard to mess up. Plus – the uses are endless! You can add it to eggs, put on a salad, or use as a dip with whole grain crackers! Consider bringing pico de gallo to your next family picnic for a great snack and a sneaky way to get extra veggies in! See below for a great and easy pico de gallo recipe.


3 medium tomatoes, chopped
½ medium onion, chopped (red or white – both work!)
½ small jalapeño, deseeded and chopped (optional for extra heat!)
1 tbsp garlic, minced
¼ cup basil, chopped
½ tsp salt
1 tsp pepper


Chop the tomatoes, onion, jalapeño, and basil. Add to a small bowl. Mince garlic and add to the bowl. Mix to combine ingredients. Season with salt and pepper. Let mixture sit for a ½ hour. The salt pulls the juices from the tomatoes making the salsa extra juicy! Enjoy! Serve with whole grain crackers or on top of a garden salad.
